Bile salt is  a fat emulsifier.It has an hydrophobic end  which points towards lipids and hydrophilic ends towards water.With this arrangement, the structure of fatty acid is modified in such a way that  the lipid is well distributed and scattered in  water.However, the chemical bonds in the lipids are not affected by the bile salts, because, bile did not  breakdown the chemical bonds in lipids to form new compound, its only changes  the food physical structure for easy digestion.

1.The statement means that,HCL and bile, which change the pH nature of the digesting food, and emulsify  the digesting food respectively, only allow for structural changes in these  food materials,but do not break or make new bonds between the components of the food substances.Therefore they  do  not formed new substances, but rather modified the  food substances, no chemical reaction occurs  but  their effects only aids  the process of digestion.

When a substances increases or speed up the rate of organic chemical reactions, but  do not undergo any permanent changes in it chemical structure, in the course of catalysis, the substance is called a catalyst.

During digestion, HCL activates precursor pepsinogen to enzyme pepsin , which aids protein digestion  in the stomach. HCL is not a catalyst,But acts  to aid the action of an enzyme , by  activating its precursor, for digestion to take place,The acid does not form a new compound.

Bile is an emulsifier , which aids the digestion of lipids  by forming to tiny globules for easy digestion. It does not form a new product, but rather modified the existing product for easy digestion.
